Shrimp Scampi Pizza Recipe

Shrimp scampi pizza with garlic butter sauce and melted mozzarella

Some recipes don’t just fill the table… they turn a night in into something special.

This garlic–shallot butter base, melted mozzarella, and tender shrimp come together for a cozy, comforting pizza that’s perfect for book club nights or a quiet evening in.

Inspired By: This shrimp scampi pizza is my home-kitchen interpretation of a once-loved California Pizza Kitchen favorite — recreated with simple ingredients and a cozy, weeknight-friendly approach.

Why You’ll Love It: Spreading the garlic–shallot butter directly on the dough builds flavor from the base up, while placing raw shrimp on top of the mozzarella lets them cook gently in the oven, staying juicy and tender without drying out.

A Little Nostalgia

Years ago, the shrimp scampi pizza at California Pizza Kitchen was one of those meals I always looked forward to ordering. There was something about the buttery garlic flavor, tender shrimp, and crisp crust that felt a little elevated without being complicated.

This version became my cozy at-home answer whenever I wanted that same comforting flavor without leaving the house — especially on quiet evenings with a good book nearby.

In my experience, baking pizza on a cast iron pizza pan is as close as you can get to having a wood-burning pizza oven at home. Yet, transferring the pizza dough onto the heated pan can be quite tricky.

The game-changing trick? Parchment Paper. Assemble your pizza on a sheet of parchment paper, then slide it (paper and all) onto your hot pan. No sticking. No stress.

Pizza on Parchment Paper

Ingredients

Garlic–Shallot Scampi Butter

  • 3 tablespoons butter, divided
  • 2 tablespoons finely minced shallot
  • 2 cloves garlic, minced
  • 1/4 teaspoon dried thyme
  • 1 tablespoon dry white wine
  • 1 teaspoon lemon juice
  • Pinch of salt and white pepper
  • 1/2 teaspoon chicken base or bouillon, optional

For the Pizza

  • Pizza dough, store-bought or homemade
  • 3/4–1 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan or Asiago cheese, optional
  • 10–12 medium shrimp, peeled and deveined, left whole if small or halved if large
  • 1 teaspoon dried oregano
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat your oven to 450°F. Stretch the pizza dough into a 10–12 inch round and place it on a parchment-lined baking sheet or pizza stone.
  2. To make the garlic–shallot butter, melt 1 tablespoon of the butter in a small skillet over medium heat. Add the shallot, garlic, and thyme, cooking gently until fragrant and softened.
  3. Stir in the white wine, lemon juice, salt, pepper, and chicken base if using. Remove from heat and stir in the remaining butter until smooth and glossy.
  4. Spread the garlic–shallot butter evenly over the surface of the pizza dough, leaving a small border around the edges.
  5. Sprinkle the mozzarella and Parmesan or Asiago, if using, evenly over the butter sauce.
  6. Arrange the raw shrimp directly on top of the cheese, spacing them across the pizza.
  7. Bake for 9–12 minutes, or until the crust is golden, the cheese is bubbling, and the shrimp are pink and opaque.
  8. Remove from the oven and sprinkle with dried oregano and fresh parsley. Let rest for a minute, then slice and serve.

Cooking note: The shrimp cook fully in the oven as the pizza bakes, so there’s no need to sauté them ahead of time.

Tips for the Best Shrimp Scampi Pizza

  • Pat the shrimp dry before adding them to the pizza so they roast instead of steaming.
  • Don’t overload the pizza with cheese — a lighter layer helps the garlic butter flavor shine through.
  • For a crispier crust, preheat your pizza stone or baking sheet before adding the dough.
  • Fresh lemon juice added after baking brightens the entire pizza beautifully.

Storage & Variations

Leftover pizza can be stored in an airtight container in the refrigerator for up to 2 days. Reheat it in the oven or air fryer for the crispiest texture.

Want to switch things up? Try adding spinach, roasted garlic, red pepper flakes, or even a light Alfredo drizzle for a richer variation.

Frequently Asked Questions

Can I use pre-cooked shrimp for shrimp scampi pizza?

Yes, but raw shrimp usually give the best texture because they stay tender while the pizza bakes. If using pre-cooked shrimp, add them during the last few minutes of baking so they do not overcook.

Does shrimp scampi pizza have tomato sauce?

No — this pizza uses a garlic–shallot butter sauce instead of traditional red sauce, giving it a lighter, buttery flavor with lemon and herbs.

What cheese works best on shrimp scampi pizza?

Mozzarella works best for a smooth, melty texture, while Parmesan or Asiago adds extra flavor and a slightly sharper finish.

Can I make this pizza on a pizza stone?

Absolutely. A preheated pizza stone helps create an even crispier crust and gives the pizza a more restaurant-style texture.

How do I reheat leftover shrimp scampi pizza?

Reheat leftovers in the oven or air fryer instead of the microwave to help keep the crust crisp and the shrimp from becoming rubbery.

Another great way to reheat leftover pizza is in a skillet, which helps restore a crisp crust while keeping the cheese perfectly melted. Place the pizza in a non-stick or cast-iron skillet over medium-low heat, add a few drops of water to the pan (not directly on the pizza), then cover with a lid and heat for 3–5 minutes.
