Inspired by a memorable pizza from the California Pizza Kitchen Cookbook, this version has become a repeat recipe in our kitchen whenever we want something a little different from traditional pepperoni or sausage pizza.

A Little Pizza Inspiration
Years ago, one of my favorite specialty pizzas from California Pizza Kitchen featured rosemary potatoes and chicken. It wasn't the type of pizza I would normally order, but one bite completely changed my mind. Ever since then, I've experimented with different versions at home, and this recipe has become my favorite.
The secret is making sure the potatoes are lightly browned before they ever reach the pizza. That extra step creates the texture that makes this pizza special.
Rosemary Chicken and Roasted Potato Pizza

Ingredients
- 1 prepared pizza dough
- 1 tablespoon olive oil
- 8 ounces cooked chicken, shredded or chopped
- 1 cup baby potatoes, thinly sliced
- 2 teaspoons fresh rosemary, finely chopped
- 1½ cups shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for roasting potatoes
- Optional: parsley for garnish
Instructions
- Preheat oven to 475°F (245°C) with your cast iron pizza pan inside. Allow the pan to heat for at least 20–30 minutes.
- Toss the sliced potatoes with olive oil, salt, pepper, and half of the rosemary. Roast for 12–15 minutes, or until lightly golden.
- Stretch the pizza dough on a lightly floured surface and place it on a sheet of parchment paper trimmed slightly larger than your pizza pan.
- Brush the dough lightly with olive oil and sprinkle with the garlic.
- Spread the mozzarella evenly over the dough.
- Top with the chicken and roasted potatoes.
- Sprinkle the remaining rosemary and Parmesan evenly over the pizza.
- Carefully remove the hot cast iron pizza pan from the oven. Using the parchment paper, carefully transfer the assembled pizza onto the hot pan. Return the pan to the oven and bake for 8 minutes.
- Carefully remove the pizza from the oven. Using tongs, gently slide the parchment paper out from underneath the pizza. Return the pizza directly on the hot cast iron pan and bake for an additional 5–7 minutes, or until the crust is golden brown and the cheese is bubbling.
- Let the pizza rest for 3–5 minutes before slicing. Finish with fresh parsley and a light drizzle of olive oil, if desired.
