Ingredients

  • 3 cups all-purpose flour
  • 1 ½ teaspoons salt
  • 1 teaspoon active dry yeast
  • 1 ½ cups warm water
  • 1 cup shredded cheese (cheddar, fontina, or Gruyère)
  • 2 tablespoons chopped rosemary and garlic

Instructions

  1. In a large bowl, whisk together flour, salt, and yeast.
  2. Add warm water and stir until a shaggy dough forms.
  3. Cover and let rise at room temperature for 12–18 hours.
  4. Fold in cheese, rosemary, and garlic.
  5. Preheat oven to 450 °F (230 °C) with a Dutch oven inside.
  6. Cut a sheet of parchment paper large enough to line the Dutch oven. Place the dough on the parchment and carefully lower it into the hot pot.
  7. Bake covered for 30 minutes, then uncovered for 15 minutes, until golden and crusty.
