  • 1 pound 93% lean ground turkey
  • 1 1/4 teaspoons poultry seasoning
  • 1/2 teaspoon fennel seed, lightly crushed

Ingredient Notes

I leave out sage in this version because it’s just not my favorite, but if your family loves that more traditional breakfast sausage flavor, you can add a small pinch back in. The fennel and poultry seasoning still give these patties plenty of savory flavor without overpowering the turkey.

Instructions

  1. In a small bowl, stir together the poultry seasoning, crushed fennel seed, salt, pepper, garlic powder, smoked paprika, and red pepper flakes, if using.
  2. Place the ground turkey in a medium mixing bowl and sprinkle the seasoning mixture over the top. Mix gently until just combined, being careful not to overwork the turkey.
  3. Divide the mixture into 8 (or 16 if doubling) equal portions, about 2 ounces each, and roll into balls.
  4. Place the balls on a baking sheet lined with parchment paper. Press each one into a patty about ½-inch thick.
  5. Cover the patties with plastic wrap and refrigerate for at least 1 hour, or longer, to allow the flavors to come together.
