One of the things I love most about homemade pizza is that it doesn’t have to follow any rules. Some nights call for familiar pepperoni and tomatoes. Others call for shrimp, rosemary potatoes, mushrooms, or whatever happens to sound good that evening.

This is the pizza I reach for when pizza night deserves a little upgrade. A buttery garlic-shallot base replaces traditional tomato sauce, then mozzarella, tender shrimp, lemon, herbs, and Parmesan or Asiago bring everything together.
It feels special without turning dinner into a project, which makes it just as good for a quiet date night as it is for book club.

Potatoes on pizza might sound unexpected until you try them. Thin slices are roasted first so the edges become beautifully golden, then they're layered with tender chicken, mozzarella, Parmesan, garlic, and fresh rosemary.
It’s hearty, comforting, and one of those pizzas that makes a cold or rainy evening feel considerably better.

Fresh Tomato, Pepperoni & Ricotta Pizza
This one takes familiar pepperoni pizza and gives it a fresh spin. Campari tomatoes, pepperoni, creamy ricotta, mozzarella, olive oil, and Italian seasoning create plenty of flavor without needing a heavy layer of pizza sauce.
It’s an easy crowd-pleaser and one I especially like for a casual book-club night because it feels familiar while still being a little different.

Shrimp & Spinach Cast Iron Pizza
My other seafood pizza takes a completely different direction from shrimp scampi. Shrimp and fresh spinach are layered with mozzarella, sharp cheddar, Parmesan, olive oil, and Italian seasoning for a simple sauce-free pizza with plenty of flavor.
Baking it on a preheated cast iron pizza pan gives the crust the crisp finish that makes homemade pizza night worth the effort.

Easy Tips for Homemade Pizza Night
Homemade pizza night doesn't have to mean making everything from scratch. I often start with prepared pizza dough and let the toppings be the star. A few simple tricks make the process easier and help give homemade pizza that crisp, fresh-from-the-oven finish.
- Let refrigerated dough rest before stretching. Dough that's closer to room temperature is much easier to work with.
- Don't overload the toppings. A few well-chosen ingredients usually give you a crisper crust and better balance of flavors.
- Preheat your pizza pan. Starting with a hot surface helps the bottom of the crust crisp as it bakes.
- Prep toppings before you assemble. Once the dough is stretched, having everything ready makes pizza night much easier.
- Finish with something fresh. Fresh basil, rosemary, Parmesan, lemon, or a drizzle of olive oil can completely change a simple pizza after it comes out of the oven.
The Pizza Trick I Use Again and Again
If you've read several of these recipes, you've probably noticed one kitchen tool appearing over and over again: my cast iron pizza pan.
I like preheating the pan so the dough hits a hot surface as soon as it goes into the oven. That helps create a crisp bottom and gives homemade pizza more of that restaurant-style crust.
Assemble the pizza on parchment paper. Slide the pizza and parchment onto the hot pan, bake for several minutes, then carefully pull the parchment out once the crust has started to set.

Turn It Into a Book Club Pizza Night
Pizza may be one of the easiest book-club dinners because it doesn’t need to be formal. Make two or three different pizzas, slice them into smaller pieces, and put everything in the middle of the table so everyone can try a little of each.

Let the dough sit at room temperature for a bit before stretching it — warmer dough is generally easier to shape and less likely to spring back while you're working with it. Then you can spend your time on the toppings instead of making dough from scratch.
How do I get a crispy crust on homemade pizza?
One of my favorite tricks is preheating my cast iron pizza pan before the pizza goes into the oven. I assemble the pizza on parchment paper, transfer the pizza and parchment to the hot pan, and then carefully remove the parchment after the crust has started to set. The hot pan helps give the bottom of the crust a crisp finish.
What pizzas should I serve for a book club or pizza party?
I like serving a few pizzas with very different flavors so everyone has something to try. Pair a familiar favorite with one or two more unexpected combinations.
